Amy Thompson is a teaching focused academic and practising Accredited Practising Dietitian (APD) in the School of Health. She brings 14 years of clinical experience across Queensland Health, community health and private practice, with specialist expertise in paediatrics, neonatal nutrition, eating disorders and complex enteral nutrition support. She contributes her expertise through involvement in several statewide and national nutrition and clinical education working groups, where she supports the development of best practice guidelines and contributes towards the development of expert consensus in new and emerging areas of paediatric and enteral nutrition practice.

Amy provides leadership in the coordination of the UniSC Nutrition and Dietetics Clinic and other clinical, hospital and health service placements across the Bachelor of Dietetics (Honours) and Master of Dietetics (Sports Nutrition) programs. She is committed to enhancing student learning, confidence and work readiness through high-quality Work Integrated Learning (WIL), strong partnerships with placement providers and the development of supportive, real-world learning environments. She has 10 years of experience in clinical education and sessional academia, contributing to curriculum development, competency mapping and the advancement of contemporary clinical education practices.

Her teaching and research interests focus on pedagogy, assessment design, feedback processes and the application of theory to case based and simulated learning environments. Amy has a particular interest in assessment methodology, programmatic assessment and students’ progression toward competency. Her work examines how teaching approaches and assessment strategies shape learning, capability development and readiness for professional practice within nutrition and dietetics.

Alongside her academic role, Amy has extensive private practice experience, having established and led a successful specialist paediatric dietetics practice. She is a trained feeding therapist with formal training and qualifications in various types of feeding and eating disorder therapies. She is a recognised expert in paediatric nutrition and is regularly invited to present by industry partners. Amy also contributes to public communication of nutrition science through frequent media engagement, including radio and print media, with particular expertise in infant, child and adolescent nutrition.

Amy holds a Master of Public Health, a Certificate in Paediatric Nutrition and Dietetics, and a Bachelor of Nutrition and Dietetics. She is a registered member of Dietitians Australia.
